You're gonna get the most variety from vintage pens. A sorta soft gold nib like that on the M1000 isn't uncommon at all if you go for a vintage pen. Most of the variety in nibs comes from the shape and size of the tipping. All of that can be had by getting stuff customized by nibmeisters. Most just requires some grinding, that's pretty cheap.
